Back-To-School Pencil Wafer Cookies

To celebrate back-to-school season, just transform a classic vanilla wafer into a pretty pencil for an after school treat!


Back-to-school is here. Or maybe it's more like back-to-school, back-to-home, back-to-school...you get the gist. Whether your virtual learning, remote, or in an actual school building, it is indeed the season for fresh pencils, crisp lined paper, and new shoes. I've always loved the start to school and I feel the same as a mama. 

While we are finding our way with a homeschool routine for Greer's Pre-K year, I'm also finding ways to incorporate some whimsy. I'm a firm believer in making the ordinary, special; and it doesn't always have to be some over-the-top idea to make a little magic in your day. Which is exactly how I decided to make snack a bit more festive for her first week back. I made little pencil wafer cookies, and they couldn't have been more of a hit! 


  • What You'll Need
    • Vanilla wafers
    • Mini chocolate chips
    • Powdered sugar
    • Milk
    • Splash of vanilla extract
    • Red food coloring

  • What You'll Do 
    • Cut two diagonals on one end of the wafer to create the sharp point of a pencil. Once you've created as many pencil-shaped wafers as you'd like, set them aside to make the icing. 
    • For the icing, begin with 1 cup of powdered sugar, more if you need. Then add a splash of vanilla, and about a teaspoon worth of milk. Stir well, and add more milk until you reach the right consistency. A very little at a time; you don't want the icing to be runny. 
    • Separate the icing into two bowls, one will remain white while the other goes pink. You'll need just a drop of red food coloring for a pretty pink. Feel free to add more if needed. 
    • Ice the tips with white icing and place a mini chocolate chip on the very tip right away before the icing sets and dries.
    • Next, add some pink icing to the square end.
    • Voila, done! Store in an air-tight container for just a day! 

**Apologies that I don't have exact measurements for the icing. I was winging it when I made these and didn't measure anything. But this type of icing is SO easy to make. Just don't overdo the milk, and add a little at a time! 

I recommend serving just one wafer and a small handful of pretzels or goldfish to balance out the sweet. That combination was a huge hit for the girls!
