Where has this week gone? It's been speedy fast, and despite my best efforts, I haven't gotten out as many blog posts as I had planned. But, currently I have a 4-year-old in rest time; a toddler napping; a snoozing baby in my arms and Gilmore Girls on in the background (I just started it over again to kick off fall!) and this recipe waiting to be shared. Friends, it's a good one, good enough to type out one-handed.
I've been enjoying this salad with crisp sweet potato fries for weeks now. It's light and refreshing, and I can't get enough. Though possibly a summer salad, I'll be serving this for dinner well into the fall. And I'll be sipping a sparkling moscato with it. Now let's get to the recipe before my babies wake!
- What You'll Need
- Top sirloin steak
- Leaf lettuce
- Strawberries, sliced
- Pecans
- Crumbled feta
- Olive oil
- Balsamic vinegar
- Crinkle-cut sweet potato fries
- What You'll Do
- We like to sous vide our steak, then crisp it up in a pan of browned butter seasoned with garlic and thyme.
- After cooked, slice it up. Season with salt and pepper.
- Shred lettuce and put in a bowl/plate - I love a pasta bowl!.
- Top with sliced strawberries, pecans (I break mine into pieces), feta, and steak.
- In a bowl, mix together 1 TBSP olive oil with 2 TBSP balsamic vinegar. You can double or triple this if you're preparing the salad for more than two people.
**Don't forget to cook the sweet potato fries!
