Looking for an out-of-the-box Christmas cookie that looks like it took hours to make, but is actually super easy? And we can't forget delicious and crowd-pleasing too! Well, I've got the perfect little cookie for you to whip up for the holidays that is packed with flavor and keeps you from spending a whole lot of time in the kitchen. If that's not a win-win, I'm not sure what is!
So let's keep this as simple as this cookie....
- What You'll Need
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1 TSP vanilla extract
- 2 cups all-purpose flour
- 1/4 TSP salt
- 1 cup pistachios, pulsed in food processor
- Seedless raspberry jam
- What You'll Do
- Preheat the oven to 325°.
- Cream the softened butter and powdered sugar together, then add in vanilla and stir till well mixed.
- In a separate bowl, combine the flour and salt. Then slowly add to the creamed mixture until thoroughly mixed. Add the pistachios.
- Next, roll the dough into 1" balls. Place on a parchment paper-lined baking sheet. Using your thumb, gently press into the center of the ball to make a small indention. Make sure not to bust through the dough.
- Scoop about 1 TSP (use more or less to your liking) of raspberry jam into each indention.
- Bake for approximately 12-15 minutes or until the bottoms of the cookie are light brown.
- Transfer the cookies to wire racks to cool.
- Dust with additional powdered sugar if desired.
