I think breakfast might be my favorite meal of the day. I really do love a good breakfast spread, but as a mama I don't have the luxury to make and then enjoy all of my morning favorites. And lately, I was finding that my typical breakfast wasn't cutting it. As in, I was hungry two hours later with another two hours to go until lunch. I just wasn't getting the right sustenance to fuel me. Anyone else feeling this way about their morning grub?
So when I finally decided to try my husband's overnight oats, I was hooked. See I had been resisting because I thought they looked gross. But, y'all, I'm glad I finally caved and gave them a go; now I crave them! And lucky for me, Pete makes them for me every night so that my morning starts off on the right track with a breakfast I love that keeps me full till lunch. He spoils me :)
What You'll Need
- 1/2 cup old fashioned oats
- 1/2 cup plain greek yogurt
- 3/4 cup skim milk
- 1 TBSP chia seeds
- 1 TBSP honey + some for drizzling
- 2 TBSP peanut butter - I opt not to add this
- Fresh fruit for topping
What You'll Do
- In a tupperware, combine the oats, yogurt, milk, chia seeds, and honey (and peanut butter if you wish). Stir well.
- Let it sit in the fridge overnight.
- Stir before eating and top with fresh fruit + drizzle with honey to your liking.
